Comfort me with a roast dinner

Roasted Baby Chicken, Potatoes, Carrots & Christophenes
If I could write something about my mum, I would immediately say what a wonderful cook she is. Well, don't we all think that Mums are the bestest cooks? It is through her cooking & the time spent in the kitchen no matter how tired she is that we see how much she loves her family.

In a way, this new diet of mine has made the menu quite interesting. I've noticed that she's trying to vary her dishes more often & introduce more exciting food. At home, a roast dinner would be the last dish she'd cook because the boys don't enjoy as much as we women do. They need their traditional boiled white rice at every single dinner, accompanied with a red meat dish. (Geez, how boring is that?? ) But what the heck, this time, the boys were forced to tag along & eat their roast dinner if they don't want to end up eating left over food:)

My mum marinated her baby chicks simply with salt, dark & light soy sauce and freshly ground pepper, seasoned with fresh herbs. After cutting her potatoes, carrots & christophenes, she boiled them until they're half-cooked. Chucking all the ingredients in a large roasting pan, she splashed them with the boiled vegetables' juice & zim zam zoom! she shoved them in the oven & let them bake for about 2-3hrs.

I'd never have thought she'd make such a perfect roast dinner, she who always complains how a bad cook she is. She made the exact same roast dinner for our relatives from the UK & they wolfed everything down. Now that it was my turn to wolf down her roast dinner & I cannot agree more with them! The baby chicken is ever so tender & juicy, baking the vegetables together with the chicks brings out the most of their flavour- it's the perfect 'passion fusion', making it even more irresistible. It sure beats the big fat chicken leg I usually eat. The smaller the bird, the better. Let's not forget the crispy but thin skins of the chicks and potatoes, I, the health freak who always finds an excuse to peel them off.

I've got my weekly appointment at the doctor tomorrow, but my tummy is just too contented to feel the pain that awaits me:)

P&P: I'm not following a low-fat diet but most of the food I eat should be warm, so I should avoid any salad or cold stuffs:)
