Shortbread cookies with a kiss of green tea

Some baking busy-ness going around: Green tea shortbread cookies, a recipe taken from Kelli's Lovescool blog. I can assure you that it's worth a try even though I had some slight trouble putting the dough together because it kept breaking into crumbs at times. But the end result was sweetly satisfying.
Green tea is my favourite drink. I need a daily dose of at least 3-4cups of green tea. After my meals & in between. I'm strangely attracted to the smell of the green tea leaves & love watching the dried leaves slowly open up as I pour boiled water in my cup. (Am I being a normal person here?)

While I browsed through the food blogs, I noticed that many of the wonderful cooks used Matcha powder in their baking & since Matcha powder can't be found in Mauritius, I was desperate to get my hands on some it. Thank goodness for my cousin from Canada who generously brought a huge packet for me! And that's how the whole green tea powder busy-ness started.

Ingredients
  • 75g Confectioners sugar
  • 150g Unsalted butter, cut into cubes
  • 235g plain flour
  • 3 large egg yolks
  • 1.5 tbs Matcha powder (powdered green tea- I used 2tbs)
  • 1 cup Granulated sugar (for coating)

Procedure

  1. Preheat the oven to 350F. Prepare your baking sheet. Whisk the confectioner’s sugar and green tea together in a bowl.
  2. Beat the butter with your electric mixer in a bowl, then add the green tea/sugar mixture & mix until smooth and light in colour.
  3. Add the flour and mix until well combined. Add the egg yolks and mix just until the eggs are fully incorporated.
  4. Form the dough into a disk and chill in the refrigerator until firm (about 30 mins).
  5. Remove from the refrigerator & roll the dough out. Cut the dough with a cookie cutter.
  6. Toss each cut cookie in a bowl of granulated sugar to coat. Place the sugar-coated cookie on your baking sheet. Bake for 12-15 minutes, or until slightly golden around the edges.

I too am so intrigued with all this matcha in baked goods! Love the taste of green tea so I'd love to bake with it but I have the same problem as you...no matcha poweder here! I am going to start bugging my relatives abroad :)

That's a beautiful color green! I once made a tea cake with Earl Grey tea -- tea is a very unique flavoring for sweets.

It's funny because I'm just looking for a shortbread recipe using "pistachio nuts dough" and I found yours with matcha tea !

Your matcha looks very grainy. I believe true matcha should be much more fine in texture. You should try something like this in the recipe - cooking matcha.
