Cute Stuffs: Sago mini-cakes

I'm sure most of you have once tasted, or at least heard about the sago dessert. Yes, I'm talking about the milky drink which contains billions of floating, translucent sagoo pearls- the sago pudding. It's a very common dessert at home, maybe because it's easy to cook & suitable after a heavy evening meal. We drink the sagoo dessert by adding an extra scoop of ice cream & maybe even some pieces of fresh watermelon. *hmmmmm*
Have you ever tried it in the mini-cakes version? We usually place the pudding in rectangular pans & cut them into small cubes when they have hardened, but I thought that I could try using my silicone mini-Bundt cake molds to obtain prettier shapes. I love cute stuffs =)
You'd love these mini-sago cakes because they're simply wonderful to have at any time of the day. Plus they have a soft & slightly chewy bite, flavoured with the vanilla extract & coconut cream powder, which make them even more irresistible.
Ingredients
  • 500g sago (small tapioca pearls)
  • 6cups water
  • 1cup sugar
  • 100g coconut cream powder
  • 2/3 of 397g canned condensed milk
  • 5 heaped tbs whole milk powder
  • 1tsp pure vanilla extract
  • Dessicated coconut

Procedure

  1. Soak sago in cold water for about 2hrs, then drain. Melt the sugar in 2cups of hot water. Pour in a large heavy saucepan & bring to boil. Mix milk & coconut cream powder in 4cups of cold water. Add the mixture to the saucepan & when it starts to simmer, reduce to low heat. Add the vanilla extract.
  2. Add the drained sago and stir slowly & constantly until the pearls become translucent and form a thick sticky lump. As the pearls expand, the milk will dry out & it will require a little more effort when stirring.
  3. When all pearls have been cooked (the mixture should be very thick with the pearls mainly sticking together) remove from heat.
  4. Sprinkle the dessicated coconut over the base of your molds (it can be a square/rectangular mold or even muffin molds) & pour sagoo over, spreading it evenly. Allow to cool before refrigerating it. When the pudding has harden, cut them into squares & roll them in the dessicated coconut. Keep refrigerated.

Mallow: I rarely use cardamon except in savoury dishes but I'm sure it'd add a lot of flavour to the sago;)

Hi Valentina, your sago mini-cakes look delightful. I have eaten sago cakes but I'm not sure of what the recipe is like (never made it myself), but it tastes similar to your recipe (except no condense milk probably).

Just made six mini sago cakes - how delicious and wonderfully chewy! (I adapted the recipe to ingredients at hand, making just half a batch omitting powdered coconut cream and milk powder, substituting 200ml of coconut milk + 200ml of fresh milk)!

As we had a huge rainstorm this afternoon, I went out afterwards and picked up the best-looking green mangoes - let's see whether I'll be able to use your pickle recipe. Beijos & abraços do Brasil!
